Blueberry Crumble Muffins

NTUC was having a promotion on blueberries and I bought 3 punnets of it. I was down to my last one plus I had some sour cream left from cheesecake baking so I decided to use them up by baking some yummy breakfast blueberry muffins. But plain old muffins sounded boring, so I added some crumble on top to make them mega sinful. And oh my they turned out so beautifully! Crunchy and crumbly on the outside with a moist and fluffy interior. Yummmeh!
Adapted from Wen's Delight with slight modifications. 


Ingredients: (Makes about 12 regular muffins)

225g Cake flour
1 tsp Baking Powder
1/2 tsp Baking soda
1/4 tsp salt
100g Butter
150g Castor sugar
2 large eggs (65g-slightly beaten)
220ml Light sour cream (Yogurt works great too)
1/2 tsp Vanilla essence
125g Fresh blueberries

Crumble Topping:
60g Castor sugar
120g Plain flour
60g chilled butter (cut into small cubes)
A pinch of salt

Method for crumble topping:
Sift the flour into a bowl with salt, add sugar and butter, then rub with fingertips until the mixture resembles breadcrumbs. If you find mixture too wet, add 1 tablespoon of flour at a time and mix it well so that it results in a breadcrumbs consistency. When done, chill mixture in fridge.

Method:
Preheat oven to 180 degrees Celsius and line the muffin tray with paper cups.
1. Cream the butter and sugar until light and creamy. Add in vanilla. Then add in beaten eggs slowly, about 1 tbsp at a time, beating constantly for about 2 minutes.
2. On low speed, stir in 1/3 of the flour mixture until just combined. Beat in 1/2 of the sour cream. Then stir in 1/2 of the remaining flour mixture, followed by the remaining sour cream. Finally stir in the remaining flour mixture. 
3. Flour the blueberries and fold them into the mixture. Be careful not to over mix.
4. Spoon into muffin cups and add crumble topping plus extra blueberries.
4. Bake for about 20-25 minutes until skewer inserted comes out clean or the top turn golden brown.
5. Serve warm or keep in airtight container for up to 2 days!

Goodies from abroad!

A bunch of goodies came in the mail last night! Oh how my priorities have changed. I used to receive packages of clothes, cosmetics and shoes and now, it's baby toiletries and breast pump packages.

But lookie at this baby! I'm so excited to receive this! I've done extensive research on pumps and it seems like Spectra (Cimilre) is steadily gaining popularity with mummies in Singapore! Online reviews have said that this pump works more effectively than Medela and Avent and I'm really not keen on spending $600-$800 on pumps when I'm not even sure if I'm going to be a mummy with supply. The whole set cost me $200 inclusive of shipping, with the pump itself just costing $120. So.damn.cheap. Buy!!

But just when my love for iherb is soaring, the recent package gave me a nasty shock. The pricey organic baby shampoo and body wash which I bought for the little one got opened mid-shipping and has spilled inside the unfastened ziplock which eventually flowed out to the rest of my stuff. 
Man... I spent the whole night cleaning up the sticky soapy mess on the rest of my stuff and decided to write to iherb customer service the next day. They apologized and have refunded me for the spilled shampoo. Pretty top notch customer service if you ask me. Why more can I ask? :)

 
I also bought Johnson's baby honey apple wash because it sounds like it'll smell awesome and it does! Plus I've never actually seen this sold in Singapore.
 
 
And a foaming hand sanitizer because, I reckon I'll be sanitizing my hands like 2854 times a day and I don't want my hands to dry up.

I love this shampoo. Cleans and lathers well, and makes my hair really soft.
 
Had an urge to pop by Sun Moulin at Isetan Scotts to buy some cheese mochi to fix my cheesey cravings. However, it pains me to pay $2.80 for 3 pieces and so I went online and researched for a recipe, got some cheese and decided to attempt to replicate the famous cheese mochi.
 
Turns out, it was so so easy! No need to pay ridiculous amount for cheese mochi anymore!!

I'm soo happy with my first attempt! Hubby took a bite and gave me a thumbs up. This will be a good snack to serve my guests this Sunday for our housewarming party. :)

The Italian weekend with a sprinkling of chores

Had awesome Italian over the weekend because we stayed away from it since our trip to Italy. It was mighty good. Cucina never fails to disappoint. Our must order when we are there are the fried calamari, crab meat pasta and 4-flavored pizza. Super yums.

 
Then we went in search for more ingredients to cook our lasagne the next day. Stocked up the fridge with more tubs of Haagen Daz ice cream than we should. 

All that hard work paid off the next day because we managed to produce this! Our first lasagne attempt with our new oven!! All that cheesy goodness was soooo good...

The weekend flew by in a jiffy with family visits and chores done around the house. We did 4 loads of laundry and our living area no longer looks like a warzone. Really glad that everything is falling into place! 

Baby fair this weekend! Can finally stock up on necessities for Junior who has been kicking up a storm in my tummy recently. 

Looking forward to October! Loads to do before Junior arrives! :)

Baby was in Phuket over the weekend so I busied myself with baking class at the CSC and attempted to transform flour and eggs into something yummy on Sunday.
